Easy Crock Pot Enchiladas

I am horrible at writing down and following recipes.

My husband can attest to this. When I'm in the kitchen, I like to create my own recipe, adding a little of this and a little of that. Maybe it's because I'm not very good at following directions if I'm busy with something else....which is always, haha :)Recently, I've been asked for this recipe half a dozen times and decided I should force myself to write it down. Before starting these, just know that you can't mess them up. Add whatever you want, change it up, make it your own :) It's fun to cook like that sometimes. I'm ALL about easy recipes and crock pot recipes because hello, 3 children under 4 and a husband rarely home equals I HATE COOKING.  So, here you have it, my easy crock pot enchiladas!What you'll need:4 frozen chicken breasts1 diced up sweet (or yellow) onionPreferred Flavoring: Salsa, hot sauce, spices, taco seasoning, green chili sauce....etc.6 10 inch flour tortillas (use corn if gluten free, or smaller ones if desired)1 19oz can of preferred enchilada sauce2 cups shredded Mexican blend cheese1 Crock pot1 9x13 panDirections:

  1. Throw 4 frozen chicken breasts in the crock pot

  2. Add one chopped up sweet onion

  3. Add whatever you want as far as spices and flavoring go. I usually add 3 shakes of Cholula per chicken breast, 1/2 cup of salsa, and a couple shakes of the Green Dragon Sauce from Trader Joes for some extra kick!

  4. Turn to HIGH for 1 hour (this helps cook the chicken fast) then LOW for 6 hours. (Basically throw all this stuff in and leave the house if you want. Let's not forget This Is Us and the crockpot scene, so just be safe. And you don't have to put it on HIGH for that first hour if you don't want.)

When your chicken looks and smells done and delicious after 7-8 hours, shred it up. To fill a 9x13 pan, I use six tortillas.

  1. Fill tortilla (I use six 10-inch burrito flour tortillas), roll, and place in pan until the whole pan is full! (See photos below for all steps)

  2. Pour 1 can (19 oz)  red or green enchilada sauce all over so entire pan is covered.

  3. Top with cheese (We love cheese so I use about 2 1/4 cups)

  4. Bake at 325 degrees for 25 minutes!

  5. Serve with sour cream, chips, avocado, salsa, or whatever you want!

  6. Drink margarita

  7. Done!
